Red Mountain
Cabernet Sauvignon
A Washington Icon of Italian Heritage
Col Solare was established in the Red Mountain AVA with the 1995 vintage upon a belief in bold, patient, and innovative winemaking techniques that few in the world have mastered. Many years later, we enjoy the fruits of a continuation of Italian tradition and an emblem of Red Mountain, the shining hill nestled deep in the heart of Washington’s wine country.
Vintage
The 2021 vintage was a very warm growing season that resulted in smaller berry and cluster size and led to intensely concentrated flavors in the wines. The typical cool nights during harvest – typical of the Red Mountain AVA – helped us retain the wonderful natural acidity Washington is known for to ensure wines are balanced. The season produced red wines dark in color and dense in concentration and white wines with varietal character and bright vibrancy.

Winemaking Notes
The winemaking process for the 2021 Collector's Cabernet Sauvignon is a testament to our commitment to quality. On October 11th, the specific block of Clone 2 Cabernet Sauvignon was carefully harvested from the estate vineyard. The grapes were gently crushed and gravity-fed into a small stainless-steel, temperature-controlled tank.
Following a three-day cold soak, daily pump-overs were performed to achieve the desired flavors and extraction. After 10 days on skins, the wine was drained to finish the barrel's primary fermentation and malolactic fermentation.
After secondary fermentation, the wines were racked to 100% new French oak and aged 20 months before bottling.
